Birria Taco sliders take the flavor packed Birria Taco meat and present them in a game-day-ready-smile-inducing-irrisistable way: a slider!

My Crock Pot Birria Tacos are always a hit and I wanted to think of even one more way to serve them (because you can never have too many tacos). That's how these sliders were born!
With tailgate season in full swing (Go VOLS!), I knew that I had to make my Crock Pot Birria Tacos into these Mexican-American fusion sliders. The homemade (and ridiculously easy) birria meat is so flavorful, it didn't need much help. I elevated store bought buns by making them sesame seed buns, added bacon to create level of smokiness to the sliders, and the cheese because...cheese makes everything better!

What are Fusion Foods?
What does fusion mean when it comes to food? It means you take foods and seasonings known to one culture or ethnicity and blend part of the ingredients with another one to make something completely new. Ingredients You'll Need for Birria Taco Sliders
- 2 ½ lbs Birria Meat
- ½ Cup Birria Sauce
- 8 Slices of Pepper Jack or Monterrey Jack Cheese
- 1 Pack Kings Hawaiian Rolls Cut in half
- 5 Strips thick cut bacon smoked, or oven cooked
- 2 tablespoon Butter
- 1 ½ tablespoon toasted sesame seeds
- 1 Sheet parchment paper - not entirely necessary
- 1 Aluminum Pan or Baking Dish
Detailed Instructions for Birria Taco Sliders
Prep Bacon and Birria Meat (Stage 1)
Step 1 : Gather ingredients together and cook bacon first. I used my favorite bacon, Wright!



Step 2 : In a stock pot, heat up birria meat and sauce. Use only enough sauce to moisten the beef. You don't want it soaking in the sauce. Reason being is the slider bun cannot hold up too much sauce and the bottom bun will fall apart (take my word on this one).
Assemble Birria Sliders (Stage 2)
Step 3 : Cut Hawaiian sliders in half. Place on parchment paper inside an aluminum baking dish.


Step 4 : Place Birria Meat on bottom bun, then place 8 slices pepper jack cheese on top of the meat and then top with chopped up bacon.
Step 5 : Brush melted butter onto top bun of sliders and then sprinkle toasted sesame seeds on top.


Cook Birria Taco Sliders (Stage 3)
Step 6 : Cover with foil, place on the Pellet Grill or oven on 350°F for 15 minutes.
Step 7 : After 15 minutes remove foil and cook another 5 minutes. Then serve immediately.

Birria Taco Sliders
Ingredients
- 2 ½ lbs Birria Meat
- ½ Cup Birria Sauce
- 8 Slices Pepper Jack Cheese
- 12 Kings Hawaiian Rolls
- 5 Strips Bacon thick cut
- 2 tablespoon Butter
- 1 ½ tablespoon Toasted Sesame Seeds
Instructions
- Gather ingredients together and cook bacon first.
- In a stock pot, heat up birria meat and sauce. Be sure to not add too much sauce, just enough to coat meat.
- Cut Hawaiian sliders in half. Place on parchment paper inside an aluminum baking dish.
- Melt butter in small pot.
- Place birria meat on bottom bun, then place 8 slices pepper jack cheese on top of the meat and then top with chopped up bacon. Finish with top bun.
- Brush melted butter onto top bun of sliders and then sprinkle toasted sesame seeds on top.
- Cover with foil, place on the Pellet Grill or oven 350℉ for 15 minutes.
- After 15 minutes, remove foil and cook another 5 minutes. Serve immediately.
