Mexican Pizza is my family's favorite mash-up recipe of different cuisines. My kids request it on the regular! Using tortillas as the crust, with ground beef and classic taco toppings, every bite is loaded with flavor.

The "rules" for this Mexican pizza are pretty loose. Experimenting is a great way for kids to build their confidence and skills in the kitchen.

- Ground Beef: The protein for the Mexican pizza. You can season the beef with taco seasonings or as you desire.
- Homemade Taco Seasoning - Can also use a package of taco seasoning, but making your own saves money!

- Bell Pepper: Crunchy and sweet vegetable taste. Any color bell pepper works!
- Jalapeño: If you like heat, or if not, then omit.
- Rotel Tomatoes: Adds bright tomato flavor and a little kick from the chilies.
- Mild Green Chilis: To boost the chili flavor.
- Tortillas: Be sure to use a tortilla size that matches the size of your cast-iron skillet. Normally, this is a 10 or 12-inch.
- Queso: Adds a nice creamy, cheesy flavor.
- Sharp Cheddar Cheese: A second melting cheese that has a sharper flavor than queso.
- Black Olives: Optional, but a great topping for tacos or pizza.
- Sour Cream and Heavy Cream: This is for a creamy drizzle topping after you've baked the Mexican Pizza. It's optional.

How to make Mexican pizza


- Step 1: Preheat oven to 350℉. In a pan, cook ground beef and season with taco seasoning. Drain grease.
- Step 2: Dice onion, bell pepper, and jalapeño. Drain canned tomatoes and green chilis.


- Step 3: Place one tortilla in your cast-iron skillet. Then, add your cooked ground beef and press it down.
- Step 4: Pour out queso on top of the meat and spread it around.

- Step 5: Add another tortilla on top of the queso and lightly press it down.
- Step 6: Begin to layer on the other ingredients: add on tomatoes, green chilies, sharp cheddar cheese, diced onion, bell pepper, jalapeño, and black olives.

- Step 7: Place in the oven for 30-35 minutes and let it cool for 5 minutes before serving.
- Step 8 (optional): Mix the sour cream and heavy cream mixture and then place it in a squeeze bottle. Drizzle over a slice of Mexican Pizza and enjoy!

I don't recommend freezing leftover Mexican Pizza as it often changes texture once thawed and reheated.
If you want to get ahead on meal prep, you can make the ground beef mixture in advance, then all you need to do is build the pizza and bake.

- 10 oz Rotel Tomatoes drained

- 2 oz Black Olives optional
- ½ Cup Sour Cream
- ½ Cup Heavy Cream
- ⅓ Red Onion diced
- ⅓ Bell Pepper diced
- 1 Jalapeño diced
