This Mexican Pizza has all the vibrant Mexican flavors in pizza form using a tortilla as the crust with your favorite toppings. It's a weeknight meal that's easy to personalize.
In a pan, cook ground beef and season with taco seasoning. Drain grease.
Dice onion, bell pepper, and jalapeño. Drain canned tomatoes and green chilis.
Place one tortilla in your cast iron skillet. Then, add your cooked ground beef and press it down.
Pour out queso on top of meat and spread it around. Add another tortilla on top of queso and lightly press it down.
Begin to layer on the other ingredients: add on tomatoes, green chilies, sharp cheddar cheese, diced onion, bell pepper, jalapeño, and black olives.
Place in the oven for 30-35 minutes and then let it cool for 5 minutes before serving.
Mix sour cream and heavy cream mixture together and then place it in a squeeze bottle so that you can squeeze it out easily on your piece of pizza pie.

Storage: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave, oven, or even in the same skillet over low heat on the stovetop until warmed through.I don't recommend freezing leftover Mexican Pizza as it often changes texture once thawed and reheated.If you want to get ahead on meal prep, you can make the ground beef mixture in advance, then all you need to do is build the pizza and bake.
