Ingredients

- Black Beans: I used rinsed and drained canned black beans.
- Corn: I used canned corn, which makes this an easy year-round recipe.
- Red Bell Pepper: To add crisp, natural sweetness as well as a beautiful color.
- Red Onion: Mild zesty flavor and some crunch!
- Jalapeño: To add a little kick!
- Roma Tomato: Perfect to make this dip without making it soggy.
- Cumin: A warm, smoky flavor that ties all the ingredients together.
- Salt: To enhance all the flavors.
- Lime Juice: To add bright citrus flavors!
- Olive Oil: To create a light dressing to coat every ingredient!
- Cilantro: Fresh Cilantro adds a burst of fresh, herbal flavor!
Tim's Tip: For the best flavor, let the salsa chill in the refrigerator for at least 30 minutes before serving! This allows time, letting the lime dressing soak into the beans and veggies.
How to Make Corn & Black Bean Salsa
1. Prep the Ingredients: Drain and rinse the black beans and corn. Dice the red bell pepper, jalapeño, roma tomato, red onion, and cilantro into small, even-sized pieces.

2. Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, and salt until well combined.
3. Toss Everything Together: In a large mixing bowl, combine the black beans, corn, red bell pepper, red onion, jalapeño, and Roma tomato. Pour the dressing over the mixture and toss until everything is evenly coated.

4. Let it Rest: Cover and refrigerate the salsa for at least 30 minutes before serving. Just before serving, gently fold in the fresh cilantro. Then Scoop and Serve!
Substitutions and Variations
- Use Fresh Corn - When fresh corn is in season, it is a fantastic substitute. For even more flavor, I recommend toasting the corn over medium-high heat for a few minutes, until they're just starting to brown.
- Add Creamy Avocado - Fold in diced avocado just before serving for a creamy twist.
- Add Cheese - Mix in crumbled cotija or queso fresco for a delicious Mexican-inspired variation.
- Turn up the Heat - Add an extra jalapeño, leave the seeds in, or stir in a pinch of cayenne pepper or diced serrano pepper for a spicier salsa.
Expert Tips
- Dice the Vegetables Evenly - Chopping the red onions, bell pepper, jalapeño, and tomatoes into similar-sized pieces ensures every bite has the perfect balance of flavors.
- Adjust the Jalapeño Heat - Remove the seeds to keep the heat mild enough for most people (or feel free to leave them in if you want more kick)!
- Let it Rest - This allows the flavors of the Corn & Black Bean Salsa to come together.
- Use Fresh Lime Juice - Fresh lime juice always makes a difference in flavor! It adds a bright, fresh flavor!

What to Serve with Black Bean Corn Dip
This Black Bean Corn Salsa Dip is the perfect addition to any appetizer spread! I also love to pair it with your favorite Mexican-inspired meals for a delicious side dish. Some of my favorite recipes to serve alongside it include:
- Slow Cooker Beef Tacos
- Chicken Bacon Ranch Quesadillas
- Turkey Enchilada Casserole
- Skillet Mexican Beef and Rice
- Griddle Nachos
Storage
Refrigeration: Store in an airtight container and store for up to 4 days in the fridge.
Freezing: I do not recommend freezing this salsa; the texture would suffer, and the cilantro would turn brown.
