Get ready for a tasty appetizer and sauce to level up your dishes! Serve this Easy Tomatillo Verde Salsa as a dip, a topping for enchiladas or burritos, or even as a dressing for salads.
Ingredients you'll need:
- 1 ½ lbs Tomatillos (can use canned as well)
- 2 Jalapenos
- 1 Red Onions
- 3 Limes
- Salt to taste (I prefer sea salt)
- 4 Cloves Garlic

What are tomatillos?

They are small green fruit that's covered or grows with what you would refer to as a husk or a papery thin covering that's typically native to Central America.
What's beneath the husk is a firm, smooth, slightly sticky, and shiny in appearance piece of fruit. Depending upon the city you live in Tomatillos are available year-round, but their peak growing seasons are summer and fall.
A tomatillo is often referred to as tomate verde, or green tomato in Spanish, they belong to the nightshade family and are not related to traditional red tomatoes. Tomatillos are a key ingredient in Central American classic sauces. It adds a vibrant, tangy flavor to enchiladas, tacos and tamales. Tomatillos are tangy and to me have a strong acidic flavor on your palette but in a really good way.
Tomatillos are not just for sauces but can be diced and added to salads, grilled as a side dish or even used to create a tangy salad dressing like a vinaigrette.
How to cook Tomatillos:
Well, you have cooking options!
- Roast in oven
- Pan or skillet roast
- Grill over charcoal or gas grill
- Boil them
Roasting Tomatillos:
Roasting tomatillos imparts a smoky, charred flavor that adds depth to your sauce which in todays video recipe that's what we are going to focus on.
Step one: Prep. Preheat your oven to 400 degrees F. Remove the papery husks from the tomatillos and rinse them thoroughly under cool water. Cut the tomatillos in half to ensure even roasting or simply leave them whole like I did in this video recipe below.
Step two: Place the cleaned tomatillos on a baking sheet. Drizzle olive oil over the tomatillos and season them with a pinch of salt and pepper. Oil and salt is optional on this step but I did not on this particular recipe.
Step three: Roast tomatillos until they become tender and slightly charred, about 15 to 20 minutes. Keep an eye on them to prevent burning.
Step four: Cool. Once roasted, allow tomatillos to cool slightly before using them in your desired recipe.
What to serve with this verde salsa:
- Go basic which is always a great choice and serve it with tortilla chips
- Top your tacos, quesadillas, nachos, burritos or even fajitas.
- Top your favorite protein with it and it will make it taste that much better.
- Mix it into scrambled eggs.
- What I did today was pan fried potatoes, topped it with a runny egg, and fresh Tomatillo Salsa.
How to store the verde salsa:
The best way to store tomatillo salsa is in an airtight container and will last 3-5 days depending upon how cold your refrigerator is. Of course, its always best served fresh.
Detailed Instructions for Easy Tomatillo Verde Salsa:



Step 1 : Gather your ingredients and clean them.
Step 2 : Place the garlic, tomatillos, jalapenos, and onion on a baking sheet and bake at 400 degrees FAHRENHEIT for 15-20 minutes



Step 3 : While Veggies are cooking prepare your other ingredients: Salt, Cilantro, and Lime Juice (Juice your limes).
Step 4: Once Tomatillos have slightly cooled, place everything in your blender and pulse to begin with. This is so that you can incorporate all the ingredients and then you blend to your desire whether that's pureed or a little chunky.

- Place everything in your blender and pulse to begin with. Then, puree to your desired thickness.
