Ingredients

- Ground Beef
- Tortilla Chips
- Taco Seasoning
- Pickles Jalapeños
- Shredded Cheese - I used cheddar for this recipe
- Queso
- Fire Roasted Corn
- Sour Cream - I used a cilantro lime flavored sour cream
- Guacamole

Step-by-Step Instructions

- Step 1: Cook ground beef on the griddle on medium low heat. Season with ½ the taco seasoning.

- Step 2: While meat is cooking, heat up queso in a pot.

- Step 3: Once meat is almost browned, season with the remaining taco seasoning. Remove meat from griddle once it's cooked. Set griddle temp to a low heat.

- Step 4: Set tortilla chips onto the griddle in the same shape as your serving tray you'll be using. This makes for an easier transfer.
Hint: Make sure the griddle is set to low before adding your chips on. This is to keep them from burning.

- Step 5: Place meat on the chips, then shredded cheese, then queso and finally the roasted corn.

- Step 6: Once everything is heated up, remove with a large spatula and place onto serving tray. Top with cilantro lime sour cream and guacamole.
Substitutions and additions
- Proteins:
- Ground beef (seasoned taco-style)
- Shredded chicken (buffalo, BBQ, or taco)
- Carnitas or pulled pork
- Chorizo
- Grilled steak (carne asada)
- Shrimp (garlic lime or Cajun)
- Black beans or pinto beans (for a vegetarian option)
- Cheese: Using pepper jack for an extra bite is a great alternative! We also top nachos with Cotija for a finishing touch.
- More Toppings:
- Diced tomatoes
- Jalapeños (fresh or pickled)
- Red onion or green onions
- Cilantro
- Avocado slices or guacamole
- Sweet corn or roasted corn
- Sliced black olives
- Shredded lettuce (added after cooking)

- Taco Seasoning - I used Kairos Taco Seasoning for these Griddle Nachos, but ALL of their seasonings are top notch!

Storage
Refrigerate ingredients separately for up to 3 days in an airtight container (best if reheated in oven or air fryer).
