Looking for a low carb keto meal? Or maybe just craving some bacon? I got you covered! This rice free bacon sushi roll is a Bacon Sushi is a playful twist between a BLT and a traditional sushi roll. Serving Bacon Sushi
- When? I mean, is there ever a bad time to eat bacon? I don't think so! But this recipe would make a great appetizer or low carb lunch option.
- Who? Any bacon lover or someone watching their crabs would particularly appreciate this dish.
- With what? Good question! Generally, this has everything you will need to make it a complete meal. But feel free to experiment with dipping sauces and additions to the roll. Pickles? Banana peppers? The possibilities are endless.



Ingredients you will need
- 14 oz Bacon (14-16 slices)
- 3 tablespoon Mayo
- ½ Cup Tomatoes
- ½ Cup Iceberg Lettuce (finely shredded)
Step 1 : Lay out your 7-8 strips of bacon side by side going across on a wire rack. If you don't have a wire rack you can buy one here* or use a sheet pan liner.
Step 2 : Then, fold back one piece of bacon on every other strip about 1 inch you will pull back a piece of bacon vertical to the horizontal piece. Then flip the 1" piece of bacon back down over the strip of bacon laid down horizontal and repeat the process until you have a full weave. It's best to make your weave on the rack or sheet pan and not move it before going into the oven.
Step 3 : Place weave into the oven at 325℉ for 18-22 minutes until bacon starts to get crispy. You don't want it fully crispy because it will fall apart. It needs to be pliable to roll up.



Step 4 : Dice up tomatoes and slice iceberg lettuce. Once bacon is cooked, pat the bacon dry with a paper towel to absorb some of the bacon grease.



Step 5 : With bacon on the bottom evenly layer with mayo, then lettuce, then tomatoes. Roll up your bacon with ingredients to make a sushi roll and slice into bite size pieces. Enjoy!!
