This corn casserole is a holiday family favorite we've been making for years! It's always requested and always the first side dish to go. I like to stick to the basics for this recipe, but some choose to add jalapeños, green chilis, and cheese. Let me know in the reviews how your family enjoyed it!

Ingredients you'll need:

- Canned Corn - you will need one can of whole kernel corn and one can of creamed corn.

Instructions for Corn Casserole:



Step 1 : Preheat your oven to 350℉. Spray your baking dish with nonstick spray.
Step 2 : In a large mixing bowl, combine your eggs, Jiffy Mix, sour cream, cream corn, whole kernel corn and your melted butter. Mix well.



Step 3 : Place casserole mixture in 9x9 baking dish and spread evenly.



Step 4 : Place the casserole in the oven for 1 hour. Check at 45 minutes to make sure it's rising. Continue cooking if it's jiggly.
Step 5 : Let cool for 5 minutes and enjoy!

Large Mixing Bowls - Set of 3 Pyrex glass mixing bowls. You can get by with one for this recipe, but two makes it so much easier when assembling.
9x9 Baking Dish - You can use a standard 9-inch square baking pan or a glass baking dish (preferred). We've also made this recipe in an 8.5 x 11 baking dish, but we like it to sit thicker, so a 9 x 9 is suggested.

Absolutely, you can. You can make corn casserole up to two days in advance. Tightly wrap in storage wrap and place in the refrigerator. Pull out 30 minutes before you are ready to bake as instructed.
For best results, I would not recommend making this casserole in advance just to freeze it (it whips up so easily when needed anyway). But for leftovers, it will freeze fine in an airtight container.
Yes, and with my family, that is often requested. I do recommend you use a 3-quart casserole dish when baking. It could also take a few minutes longer on the bake time.
