2. Make the Chicken Filling: In a medium bowl, combine the cooked chicken with the BBQ sauce until evenly coated. Spread the chicken mixture evenly over the bottom buns. Top with a little extra sauce if you like your sliders extra saucy.
3. Assemble the Sliders: Top the chicken with the pickled onions, mozzarella cheese, smoked Gouda, and chopped cilantro. Season lightly with salt and pepper if desired. Place the top halves of the slider buns over the filling.
