Crock-Pot Shredded Chicken is a meal prep hero! With just a few ingredients and minimal effort, you can make a big batch of tender, flavorful chicken that's perfect for a variety of meals throughout the week.
How to Prep Chicken:
In just 4 steps, you'll have chicken to the feed the family all week! Here's what you need:
- Chicken Breasts
- Chicken Base
- Crock Pot
Here are the steps:
- 1: Place chicken into the Crock-Pot Slow Cooker.
- 2: Add 3 tablespoon of Chicken Base into ½ Cup of Water and mix well. Pour mixture over the chicken.
- 3: Cover and cook chicken on low for at least 4 hours. Don't be afraid to let it cook all day. It won't be dry. (you're wanting the chicken to fall apart easily)
- 4: Shred apart with forks. Use right away, add to a meal prep or store for later use.

Ingredients

To make your easy One Pot Buffalo Chicken Tortellini, here's what you'll need:
- Shredded Chicken
- Tortellini - For this recipe, I used a pack of 3 cheese tortellini
- Heavy Cream
- Cheese - We used both cheddar cheese and blue cheese
- Cream Cheese - Best if you soften on the counter before adding to pot
- Buffalo Sauce
- Salt, Pepper and Garlic Powder
- Scallions or Chives (optional)

Step-by-Step Instructions

- Step 1: Finely shred cheddar cheese and blue cheese.

- Step 2: Heat a stock pot to medium/low heat and add in heavy cream. Once it's warm, stir in salt, pepper and garlic powder.
Tip: If you place the blue cheese in the freezer for 10-20 minutes, it hardens and becomes easier to shred!

- Step 3: On medium heat, slowly add in blue cheese and cheddar cheese so they melt completely.

- Step 4: Once cheese is melted, add in the tortellini and cook for 5 minutes. Then, add in shredded chicken and buffalo sauce. Cover and simmer for 5 minutes.

- Step 5: Drizzle with buffalo sauce and scallions and serve!

Storage
Store your one pot buffalo chicken tortellini in an airtight container in the refrigerator for up to 4 days. Reheat on the stove top adding more heavy cream if needed.

Variations and Additions
Meats: Rotisserie chicken works GREAT for this recipe! It's easy and flavorful. You can also add in bacon or use grilled shrimp or ground turkey in place of the chicken.
Toppings: Don't want it too spicy? Drizzle with Ranch instead! Want to swap out the chives/scallions? Parsley also makes for a great topper!
Adding Veggies: Add some nutrients and some crunch by slicing carrots and celery and adding into the pasta. Best if they are sautéed first. Adding spinach or kale is also a fun way to add in color and it doesn't need to be cooked long (add into the pot with the Tortellini step 4).
More Flavor: To add more spice, consider adding in crushed red flakes or a hotter buffalo sauce. Adding in freshly minced garlic instead of garlic powder will also make the flavor more bold. If you're looking for a smokey version, add in smoked paprika.

- ½ Cup Cream Cheese softened
- ¼ Cup Blue Cheese shredded
- ½ Cup Cheddar Cheese shredded
- ⅔ Cup Buffalo Sauce
- ¾ teaspoon Salt
- ¾ teaspoon Pepper

- Chives or Scallions optional toppings
