When you're needing a fast meal to feed the family, this One Pot Buffalo Chicken Tortellini is here to save the day! It's creamy, cheesy, bold and perfect for weeknights when you want big flavor without the hassle.
Heat a stock pot to medium/low heat and add in heavy cream. Once it's warm, stir in salt, pepper and garlic powder.
On medium heat, slowly add in blue cheese and cheddar cheese so they melt completely.
Once cheese is melted, add in the tortellini and cook for 5 minutes. Then, add in shredded chicken and buffalo sauce. Cover and simmer for 5 minutes.
Drizzle with buffalo sauce and scallions and serve!
