Pork steaks are a tender, flavorful cut of meat usually from the pork shoulder roast (often called the Boston butt). This is the same cut of meat used to make pulled pork, so you know it is packed with rich flavor.
It is well-marbled, allowing it to stay juicy and become incredibly tender when grilled, smoked, or braised in sauces. They're also relatively inexpensive, making them a budget-friendly option.

- Mustard: The binder to hold all the goodness!
- Worcestershire: A perfect addition of that umami flavor.
- Butter: Butter makes everything better.
- Apple Juice: A touch of sweetness to go with the grill flavor.
- Spice Rub: I used my Prime Rib Seasoning to go towards "steak flavor."
Tim's Tip: Keep a close eye on the internal temperature so you don't overcook the steaks. I like to pull them at 185°F.
How to Cook Pork Steak
1. Prepare the meat: Pat your pork steaks dry if needed, then smear a generous portion of yellow mustard over the meat as a binder to grab the seasoning. Then season well with the BBQ rub on both sides.


2. Smoking the Steaks: Preheat the smoker to 250°F and cook the steaks directly on the upper grate for one hour (or indirect heat). Flip at the 30-minute mark. Cook at this temperature 1 hour (or until the pork steaks reach 140°F).
3. Prepare Basting Sauce: At the end of the hour, whisk together melted butter, apple juice, and Worcestershire in a small bowl.


4. Raise Smoker Temperature: Once the steaks have reached 140°F, increase the temperature of the smoker to 300°F and generously baste your steaks with the basting sauce and flip them. Repeat every 15 minutes until the steak temperature reaches 165°F (about 30 minutes), then place the pork steaks on direct heat (closer to the heat source).
5. Finish Cooking: Continue cooking until the pork steaks reach at least 185°F.
