How to make Garlic Parmesan Chicken with Potatoes

1. Cook the Potatoes: Preheat your air fryer to 400°F. Peel and cube the russet potatoes, then place them in a bowl. Drizzle with half of the olive oil and season with half the salt, pepper, garlic powder, and paprika. Toss until evenly coated.
Transfer the potatoes to the airfryer and cook for 20 minutes, shaking or stirring halfway through, until crispy.

2. Season the Chicken: While the potatoes cook, cut the chicken into bite-sized pieces. Add to a bowl and toss with the remaining olive oil, salt, pepper, garlic powder, and paprika until well coated.
3. Cook the Chicken: Heat a large skillet over medium-high heat. Melt the butter, then add the seasoned chicken. Cook, stirring occasionally, until the chicken is fully cooked and reaches an internal temperature of 165°F.
4. Preheat the Oven: Preheat your oven to 375°F.

5. Make the sauce: Once chicken is cooked, add the minced garlic to the skillet and cook for 2-3 minutes until fragrant. Pour in the Garlic Parmesan Sauce and simmer for 3-4 minutes, allowing it to reduce slightly.
Add the cooked potatoes to the skillet and toss everything together until well combined.

- Grating Fresh Mozzarella will make this taste SO much better than bagged cheese.
- Make sure you use a large enough skillet. You'll end up combining all the ingredients for the bake, and you don't want anything bubbling over.
- If you don't have an air fryer - Coat potatoes with oil and seasoning and place them in an oven at 425°F for 35-40 minutes. Toss them mid-way through and keep an eye on them!
