Cook the Potatoes: Preheat your air fryer to 400°F. Peel and cube the russet potatoes, then place them in a bowl. Drizzle with half of the olive oil and season with half the salt, pepper, garlic powder, and paprika. Toss until evenly coated. Transfer the potatoes to the airfryer and cook for 20 minutes, shaking or stirring halfway through, until crispy. 5 Russet Potatoes4 tablespoon Extra Virgin Olive Oil2 teaspoon Salt2 teaspoon Pepper1 teaspoon Garlic Powder2 teaspoon Paprika
Season the Chicken: While the potatoes cook, cut the chicken into bite-sized pieces. Add to a bowl and toss with the remaining olive oil, salt, pepper, garlic powder, and paprika until well coated. 1 lb Chicken Breast
Cook the Chicken: Heat a large skillet over medium-high heat. Melt the butter, then add the seasoned chicken. Cook, stirring occasionally, until the chicken is fully cooked and reaches an internal temperature of 165°F. 2 tablespoon Butter
Preheat the Oven: Preheat your oven to 375°F.
Make the sauce: Once the chicken is cooked, add the minced garlic to the skillet and cook for 2-3 minutes until fragrant. Pour in the Garlic Parmesan Sauce and simmer for 3-4 minutes, allowing it to reduce slightly. 1 tablespoon Garlic1 Cup Garlic Parmesan SauceAdd the cooked potatoes to the skillet and toss everything together until well combined.
Bake and Finish: Sprinkle with freshly grated mozzarella cheese over the top. Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is melted and lightly golden. 1 Cup Mozzarella
Notes
Make sure potatoes are crispy when coming out of the air fryer. Add more time if needed. Shaking them around more often helps to keep them from burning in the air fryer as well.
Grating Fresh Mozzarella will make this taste SO much better than bagged cheese.
Make sure you use a large enough skillet. You'll end up combining all the ingredients for the bake, and you don't want anything bubbling over.
If you don't have an air fryer - Coat potatoes with oil and seasoning and place them in an oven at 425°F for 35-40 minutes. Toss them mid-way through and keep an eye on them!
If you don't have Buffalo Wild Wings Parmesan Garlic Sauce, you can make your own using melted butter, minced garlic, grated parmesan, and a splash of cream.
