Poolside snacks are a must have around this house and this one hit the spot! I'm always looking for a way to use my favorite sausage (Conecuh Smoked Sausage) and adding it to this dip did NOT disappoint!
What I love most about this Recipe? It's customizable! Make it meatless, add more veggies or hispanic flavors... Make it yours!

Make Ahead Taco Seasoning
No more buying packets of seasoning! Make your own and save your cash. Want it spicier? Add more cayenne. Want more color to it? Add more paprika. Make it YOUR seasoning the way YOU want it.
Here's What You'll Need:
- 3 tablespoon Chili Powder
- 2 tablespoon Cumin
- 2 tablespoon Pepper
- 2 ½ tablespoon Kosher Salt or Sea Salt
- 2 tablespoon Oregano
- 2 tablespoon Onion Powder
- 2 tablespoon Garlic Powder
- ½ teaspoon Cayenne Pepper
- 1 tablespoon Paprika
Step-by-Step Instructions

- Step 1: Preheat grill to 350°F. Season corn with 1 tablespoon Taco Seasoning (Fiesta That).

- Step 2: Grill corn for 20 minutes on indirect heat.
Tip: This can also be cooked in an oven or pellet grill. For this recipe, I used a weber charcoal grill.

- Step 3: In an aluminum pan, prep ingredients while the corn cooks. Chop cilantro and dice onion and jalapeños. Cut all cheese into cubes.

- Step 4: Remove corn from the grill and cut corn away from cob.

- Step 5: Mix corn and remaining taco seasoning into ingredients in the aluminum pan.

- Step 6: Grill the corn queso for 1 hour, stirring it at the 30 minute mark. Serve with tortilla chips and enjoy!
Tip: Do not cover the aluminum pan with a lid. This will allow more of the smoky charcoal flavor to incorporate into the Corn Queso Dip.

Storage
After allowing the dip to cool, store it in an airtight container in the refrigerator for up to 4 days.
