As someone who's always been drawn to Asian flavors, especially Korean cuisine, I couldn't resist giving their sauces a try. After tasting their fish sauce and smoked soy sauce, I was completely sold. It was clear that these sauces were something special, and I couldn't wait to bring them into my own kitchen. Marinade for Pork Ingredients
- Wangshin Smoked Fish Sauce
- Gochujang
- Soy Sauce
- Pork Cutlets

Fried Rice with Kimchi Ingredients
- Cooked Rice (day old rice)
- Avocado Oil or Rice Oil - separated
- Garlic, minced
- Ginger, minced
- Soy Sauce
- Smoked Wangshin Fish Sauce
- Sesame Oil
- Kimchi, sliced
- Eggs
- White Onion, diced
- Kimchi Seasoning or your favorite meat seasoning (Optional)
- Salt & Pepper to taste
- Butter
- Scallions, for topping
- Toasted Sesame Seeds, topping

Instructions
This Pork Fried Rice with Kimchi recipe is written with the assumption you have day old rice handy and ready to use. It will still work with freshly cooked rice but allow yourself more time for that process. Use day old rice for BEST results.
If needing to toast sesame seeds:
Heat up a skillet or wok on medium low for 3-4 minutes. You will know it's ready when the skillet is too hot to touch. Then, pour in your sesame seeds and allow them to roast for 60 seconds. After the 60 seconds, move them around every 10-15 seconds in a circular motion. Keep roasting until seeds look golden brown.

- Step 1: Prepare ingredients by finely mincing garlic and ginger, slicing kimchi and scallions, dicing onion and whisking 3 eggs. Toast Sesame Seeds if needed.

- Step 2: In a bowl, mix together marinade ingredients (fish sauce, gochujang and 1 cup soy sauce). Place in pork cutlets and marinate for at least 1 hour.
Hint: Marinating overnight is even better!

- Step 3: Remove pork from marinade and season with Kimchi Sprinkles. (Can substitute and use ginger powder, salt, pepper, and garlic powder).

- Step 4: Heat a large skillet or wok on medium heat with 2 tablespoon Oil. Cook pork for 3 minutes on each side or until internal temperature reaches 145°F. Remove from skillet.

- Step 5: With skillet or wok still on medium heat, add in diced onion. Once tender, remove from skillet.

- Step 6: Place 2 tablespoon oil into the same heated skillet. Break up rice with your hands and add rice to the skillet. Cook rice until it developed a crust and then flip and cook other side (6-8 minutes per side).

- Step 7: Move rice to outer sides of the skillet to form a 'well' in the middle. Melt butter in the 'well'. Then, add in garlic and ginger and cook for 2 minutes. Then, add in whisked eggs and cook for 2 minutes.

- Step 8: Add in cooked onions and sliced kimchi. Mix together all the ingredients in the skillet. Pour in soy sauce and fish sauce and cook fried rice for another 5 minutes. Serve rice with sliced pork, toasted sesame seeds and scallions on top.

Substitutions for Pork Fried Rice with Kimchi
- Meats - I've also made this recipe with steak. That can be found here. It's also great topped with shrimp!
- Kimchi - If you're not a fan of Kimchi, simply leave it out. You can also sub it out for sliced cabbage, broccoli or zucchini. All work great!
- Vegetarian - Leaving out the pork is a great option as well! Sub if out for more eggs or tofu to add protein. I also have a Vegetarian Stir Fry that you'd love!
