Enter my wife's slow cooker recipe with Lipton onion soup mix. In fact, now that all of our kids are grown, this dish is still requested at our family dinners. This few-ingredient recipe is so easy to make! After just a tiny bit of prep, you will simply put everything in the crock pot and set it to cook. Let the Crockpot work its magic while you go about your day, and in a few hours, you'll have a delicious, tender pot roast that's perfect for a weeknight dinner. One of my favorite memories is walking into the house and being greeted by that amazing aroma, knowing dinner is almost served.

- Step 1: Season the chuck roast with salt, pepper, and garlic before placing it in the bottom of the crockpot.

- Step 2: Rough chop your vegetables and place them in the crockpot around the roast.

- Step 3: Add in the Cream soup, beef base, water, Lipton soup mix, and slightly stir.

- Step 4: Turn the Crock Pot and go about your day! Cook on low for 8 hours or on high for 4- 5 hours.
PRO TIP: Remember that not all crockpots are created equal. It may take a bit longer to ensure meat and veggies are ready! The size of your roast could also be a factor. Check for doneness before serving.

PRO TIP: Remember, every time you open the lid of a crockpot, you lose 30 minutes or more of cooking time. I know it is tempting to open and give it a stir, but trust me and resist that temptation! Let the slow cooker do its work!

Substitutions
- Potatoes: I find the smaller potatoes work better in keeping their shape. You can use whatever you have on hand, just make sure to cut them up into even-sized chunks.
- Carrots: Smaller snack carrots work well with this recipe, and there's no need to cut them! Save a step and buy small carrots if that's better suited.
- Cream of Mushroom Soup: If you look in your pantry and find you only have cream of chicken, feel free to use it. This recipe is so flexible that it will be just as good.
- Vegetables: You can customize this to your family's taste; feel free to add celery if you like it, go heavy on the carrots, or skip them altogether. I always chunked my onions up large so they could be picked out if preferred.

Storage
Crockpot Pot Roast will last up to 4 days in the refrigerator if stored in an airtight container. We also freeze ours in SuperCube containers for no more than 3 months.

I do recommend searing the roast if time allows. Searing locks in all those juicy flavors and gives the meat a beautiful brown crust. Just coat the roast with the spices and sear for 3-5 minutes on each side.
For this recipe, I add them all at the start. They will cook until the roast is tender and will be perfectly cooked. I do try to cut them all to about the same size.
