It's been a while since I have posted an easy one pot meal that makes life simple. Especially if you have children and you are wanting a simple, easy meal.
If you are looking for an easy weeknight or even weekend meal that is made in one pot, then this Cajun Chicken Pasta potentially checks all the boxes. If you are looking for convenience and something easy this dish makes its really easy for you to let the pot do the work for you as well as change a few things around as well.
Cooking Time:
Takes 30 minutes or less as long as you follow along the recipe. The only real prep is chopping the onion, bell pepper, and chopping up the chicken.
What kind of pasta to use:
I recommend staying with a Penne or Bowtie pasta verses Linguini or Spaghetti Noodles for easy of the recipe.
How to make it extra creamy:
You can easily add a little more cream cheese if you like it a little more creamier than this recipe.
Customizable?
Yes, you can certainly customize this recipe in many ways by changing the pasta you use to adding a little more heat to using Ricotta Cheese to change things up or even use Shrimp or Chicken Thighs or even pork.
Let's get to the full recipe starting with the ingredients
- 2 tablespoon EVOO - extra virgin olive oil or even canola works as well as Avocado Oil.
- 1 lb of Chicken - add more chicken if you like more protein
- 2 ½ teaspoon Tony Chachere's Cajun Seasoning
- 2 Medium Bell Peppers - sliced into ¼ 'strings
- 1 Yellow or White Onion sliced or finely chopped if you are not a fan or large onion pieces
- 3 Garlic Cloves diced
- 1 lb of Penne Pasta
- 5 Cups of Chicken Stock
- 6 oz Cream Cheese
- Salt and pepper to taste
- 4 scallions diced - Green parts for garnish
- 12-14 oz can of diced tomatoes (What makes this even better is using fire roasted tomatoes)
- Parmesan to taste or garnish

Detailed Instructions for One Pot Cajun Chicken Pasta:



Step 1 : Gather all your ingredients, prepare your vegetables, and slice the chicken into bite size pieces. Season chicken with Tony Chachere's.
Step 2 : Heat a large stock pot (I am using a 8 qt Hexclad in this video) over medium heat and then add your oil. Allow it to heat for 90 seconds



Step 3 : Add the chicken and cook 2 minutes until slightly browned on the outside.
Step 4: Add the vegetables and stir cooking for 4 minutes until the soften just slightly and then add in garlic and cook for 1 minute.



Step 5: Add pasta, chicken broth (Stock), canned tomatoes, and then bring it to a boil. Stir about every 3 minutes to ensure even cooking. After 12 minutes taste the pasta to see if it's al dente if you prefer your noodles to be a little firmer otherwise go the full 15 minutes.
Step 6: Turn off the heat if you have electric stove and remove from eye or if you have a gas stove simply turn off the flame and add in cream cheese and stir around until cream cheese is completely incorporated and then adjust your seasonings at this point. Salt or Pepper or More Cajun Seasoning.



Step 7: Last and final step is be sure to top with scallions and some fresh grated parmesan.
