Bone marrow adds such a creamy umami flavor to anything you're cooking.. especially if you are grilling steaks, chicken or pork! This recipe adds a flavor bomb like I have never had before.
How do I get the Bone Marrow?

The recipe to make bone marrow butter is super simple. It requires cooking the bones one of two ways: broiled or grilled. To make the process easy, broil them in the oven OR cook them over a charcoal grill (or smoker) for 30 minutes. Once it's cooled, you can add it to butter and jazz it up with more ingredients.

What does Bone Marrow go with?
Bone marrow is the soft, fatty tissue inside of bones. You can grill it and eat just as it is, but I love adding it to other ingredients to enhance the flavor. I do suggest trying it alone to really understand its depth of flavor it can bring to a dish.
It can even be added to soups, sauces, and dishes as a main flavoring component. In this recipe, we'll be adding it to butter. And who doesn't love butter!? This Bone Marrow Compound Butter goes great on anything grilled or even toasted in the oven.

Ingredients You'll Need for Bone Marrow Butter
- 4 Beef Marrow Bones
- 1 tablespoon Flakey Sea Salt
- 8oz Irish Butter (or Salted Butter)
- 1 ½ tablespoon Garlic, minced (Roast it for extra flavor)
- 1 teaspoon Fresh Rosemary
- 1 ½ teaspoon Lemon, zested
- 1 Shallot, minced (about 2 Tbsp)
Detailed Instructions for Bone Marrow Butter
Step 1 : Soften your butter by setting it out at room temp for 2 hours.
Prepping Bone Marrow for Smoker
Step 2 : Preheat oven, grill or smoker to 350°F.

Step 3 : Set your beef bones out and season with salt.

Cooking Bone Marrow and Extracting
Step 4 : Place on the grill at 350° for 25 minutes - then remove and set aside to let them cool. While waiting, mince garlic, finely chop rosemary and shallot, and zest lemon. Place to the side.

Step 5 : Using a spoon, scrape out all the marrow. Place to the side to make sure it's completely cooled off before adding it to butter.
Making the Butter


Step 6 : In your food processor place butter, bone marrow, garlic, rosemary, lemon zest and minced shallot. Pulse them until they are completely incorporated.

Step 7 : Lay out a sheet of plastic wrap and dump the butter mixture then roll it up like a candy wrapper and place in the refrigerator to set for at least 45 minutes.

- 4 Beef Marrow Bones
- 1 tablespoon Flakey Sea Salt
- 8 oz Irish Butter or Salted Butter

Instructions
- Set your butter out at room temp to get soft 2 hours before.
- Preheat oven, grill or smoker to 350°F.
- Set your beef bones out and season with salt.
- Place on the grill at 350° for 25 minutes - then remove and let them cool. While waiting, mince garlic, finely chop rosemary and shallot, and zest lemon. Place to the side.
- Using a spoon scrape out all the morrow and place in the food processer or in a bowl.
- In your food processer place butter, bone marrow, and all the other ingredients and pulse them until they are completely incorporated.
- Lay out a sheet of plastic wrap and dump the butter mixture then roll it up like a candy wrapper and place in the refrigerator to set for at least 45 minutes before using.
