Set your butter out at room temp to get soft 2 hours before.
Preheat oven, grill or smoker to 350°F.
Set your beef bones out and season with salt.
Place on the grill at 350° for 25 minutes – then remove and let them cool. While waiting, mince garlic, finely chop rosemary and shallot, and zest lemon. Place to the side.
Using a spoon scrape out all the morrow and place in the food processer or in a bowl.
In your food processer place butter, bone marrow, and all the other ingredients and pulse them until they are completely incorporated.
Lay out a sheet of plastic wrap and dump the butter mixture then roll it up like a candy wrapper and place in the refrigerator to set for at least 45 minutes before using.
