
If you forced me into a corner and told me I had to eat Salmon, Halibut, or Chilean Sea Bass for the rest of my life! I would probably hug you and tell you that you're a superstar!
Why?
Fish is really one of my favorite proteins to eat! As much as I love smoking meats on my Smokers and Pellet Grills, I'd choose to eat fish over red meat any day! My favorite foods are the ones that come from the ocean.
Several years ago, I discovered Chilean Sea Bass at a French Restaurant in Dallas, Texas. It was a 4-onion crusted Chilean Sea Bass, and I've been in love ever since! Now, whenever I get to chance to splurge on it, I do!
What's a Chilean Sea Bass?
It is known as the Patagonian Toothfish in Chile, found in the cold sea waters of South America. What makes this so good? It's similar to Halibut and Salmon, thriving in very cold water between 34-39°F and depths of 150 feet to as deep as 12,000. They can also be caught in the Atlantic, Pacific, and Indian Oceans.
What makes it so good?
To me, it's the freshness of it because it lives in such cold water, which makes it so juicy, tender, and flaky! If you have never had it before, then please give it a try, and if you live in North America, popular places commercially or retail places to buy are Sam's Club and Costco.
Don't forget the Mango Salsa!

You take the sweetness of the fish and add a mango salsa to go on top with some acidity, then it's over-the-top amazing!

Helpful Items for a Perfect Chilean Sea Bass
- Air Fryer - This Ninja brand is top-notch! We've had it for years, and it's been going strong!
- Bench Scraper - Anytime I cook, this is on the counter. It makes for an easy cleanup and to make sure no ingredients are left behind.
- Mixing Bowls - Priority Chef mixing bowls have a non-slip bottom that I LOVE! Less mess is always best, right?
- Measuring Cups - Having a set of different sizes is lifesaving in the kitchen! This Anchor brand is my go-to.
- Lattice Cutter - Although not needed, it does make the Wellington look picture perfect!
- Meater Plus Probe - Never guess whether or not your meat is at temperature again. This probe comes with an app that will alert you when it's ready!
- Salt - When I'm using salt as a topper for finishing dishes, I like to use a quality salt.
Ingredients you'll need for your Chilean Sea Bass
The Salsa
- Mango
- Pear
- Red Onion
- Cilantro
- Scallions
- Lime Juice
- Orange Juice
- Sea Salt
The Fish
- Chilean Sea Bass with Skin on
- Sea Salt
- Garlic Powder
Instructions for the best Air Fryer Chilean Sea Bass
Making Salsa
Step 1 : Set out and measure all ingredients. Dice mango, pear, red onion, cilantro, and scallions. Juice lime and orange until you have 1 tablespoon of each.

Step 2 : In a bowl, mix together the diced ingredients. Lightly mix in lime juice, orange juice, and sea salt. Note: For best flavor and results, make salsa at least 1 hour in advance so that the flavors have time to marry together.
Season and Cook Sea Bass
Step 3 : Preheat your air fryer to 350°F. Season your fish with salt and garlic powder. Then, place in the air fryer skin side down for 10 minutes.
Step 4 : Remove from the air fryer and let it rest for 3-5 minutes to properly cool off. Plate it, top with the mango salsa, and enjoy.

The Fish
- 8 oz Chilean Sea Bass with Skin on
- ¾ teaspoon Sea Salt
- ½ teaspoon Garlic Powder
The Salsa
- ½ Cup Mango diced
- ⅓ Cup Pear diced
- 2 tablespoon Red Onion diced
- 1 ½ tablespoon Cilantro
- 1 tablespoon Scallions
- 1 tablespoon Lime Juice
- 1 tablespoon Orange Juice
