
This recipe for Easy Tomato Basil Crock Pot Soup takes the standard tomato soup just a couple steps further. The additional of basil gives the soup a bit more elevated flavor profile, and the use of a crock pot and immersion blender keep the preparation simple so you're not in the kitchen all day. Plus, your house will smell incredible!

To make your Tomato Basil Soup you'll need:
- Tomatoes - Both Large and Cherry Tomatoes
- Bell Peppers - Small bell peppers work easier. Be sure to remove seeds
- Onion - Sweet or White Onion is best. If you can get your hands on a Vidalia Onion, it's even better!
- Fresh Basil
- Garlic Cloves - I put these in the crock pot whole
- Vegetable Stock
- Chicken Base (optional)
- Seasonings - Salt and Black Pepper
- Olive Oil
- Heavy Cream
Why immersion blenders are a kitchen must have
Immersion blenders can save you from making a mess. Cooks are quick to grab a hand blender, but if you're mixing a shallow dip...it'll splash it everywhere. Hand blenders DO NOT chop and liquify. Immersion blenders are great for completely binding flavors, making dips, smoothies, soups, mashed potatoes and more!

Step-By-Step Instructions

- Step 1 : Place all the ingredients in a crockpot. Place the lid on and cook on low for 7 hours.


- Step 2 : Remove lid and pour in ½ Cup heavy whipping cream. Puree using an immersion blender and then place lid back on for a few minutes to heat back up. This will take time, be patient with it. It's worth it!
- Step 3 : Serve with a drizzle of cream on top, fresh basil and a pinch of salt. Enjoy!

Serving Suggestions for Tomato Basil Soup
- With grilled cheese, of course! Bonus points if you make the bread using my Sourdough Bread recipe.
- Plain ol' saltine crackers!
- Along side a salad to make it a complete meal.
Customizations and variations:
I always encourage home cooks to get creative in their kitchens. Here are some options to try but, remember, the options are limitless!
- Experiment with different varieties of tomatoes
- Alter rations to see what you like best - less cream, more basil, etc
- Try roasting your garlic and/or onions first
- Have fun with different toppings! Croutons, cheeses, fresh herbs, crackers, etc.
- Brainstorm ways to get creative with the texture, flavor profile, and consitency.

Ingredients
- 4 Large Tomatoes Cored
- 20 oz Cherry Tomatoes
- 1 Onion Chopped
