Homemade Pasta
Equipment
- Pasta Maker Attachment or rolling pin
Ingredients
- 2 cups All Purpose Flour
- 5 ea Egg Yolks
- 2 ea Whole Eggs
- ½ teaspoon Sea Salt
Instructions
- Make a well with the flour using your fingers or fist and then simply pour the eggs into the well. Poke the yolks with a fork and simply mix the eggs until they are scrambled.
- Then start scraping the sides of the well walk bit by with incorporating the flour with the eggs until the walls are gone and what you are left with is a paste.
- Then using your hands form the dough and begin to knead until it has become somewhat of a ball. Then briefly knead only a minute and then once you have formed a dough ball wrap it in plastic wrap and let it rest for 30 minutes.
- Using a cutter or scrapper cut the dough into four portions.
- Remove from plastic and start pressing it out using your fingers and be sure to use some bench flour as well. Then use a rolling pin to flatten it out and fold over into three's and then repeat the process and roll it out thin enough to start running it through the pasta maker.
- Then after 3-4 passes you should have it thin enough to your liking or what is said you should be able to see your fingers through it once pressing on it.
- Then simply cut the pasta and incorporate a little flour so that it doesn't stick together and then use right away and or freeze for use later.
