Here's a simple and delicious garlic parmesan potato recipe with just six ingredients. It's a quick and easy side dish that pairs perfectly with any meal!

My assistant came to me wanting to make her grandmother's favorite side dish, and she knew I'd love it-and she was absolutely right! This classic Italian side dish pairs perfectly with almost anything, and the ingredients are ones I always have on hand. The buttery, garlic-infused potatoes are sure to become a new staple in my kitchen!
We often make this with another favorite of mine, Chicken Creamed Spinach. It'd also go great with any red meat dish, like Steak and Chicken Skewers or an Easy Pork Roast.
Ingredients
Although there are option for dried ingredients.. I encourage you to use fresh ingredients for this recipe. Or else Grandma is coming for you! Using freshly grated parmesan and fresh parsley really does elevate these simple potatoes to a new level. If you're able to freshly grind peppercorns, you've just gone above and beyond!

- Medium Sized Potatoes (we leave the skin on)
- Butter
- Garlic Cloves, minced
- Salt and Pepper to taste
- Parsley, fresh or dried
- Parmesan Cheese, shredded

Instructions

- Step 1: Preheat the oven to 375°F. Mince garlic and grate parmesan cheese. Chop parsley if using fresh.

- Step 2: Slice potatoes ⅛ inch thick and place half of them along the bottom of the baking dish.

- Step 3: Season with salt, pepper and parsley. Spread ½ of grated parmesan cheese on top. Add another layer of potatoes and repeat a layer of seasonings and cheese.

- Step 4: Melt butter in a small pot. Once melted, add in minced garlic and stir. Cook for 3 minutes on medium heat. Pour butter over potatoes.

- Step 5: Cook for 45 minutes or until tender.

- Step 6: Allow to cool for 10 minutes and serve!
Tip!
Depending on how thin you slice your potatoes, you may not need to bake them for the full 45 minutes. Check them at the 30 minute mark to see if they are tender.
Substitutions and Variations
- Parmesan Cheese - If you don't have parmesan, good cheese substitutions are Asiago, Piave, Cotija or Grana Padano.
- Add Seasonings - We've added smoked paprika to this before too. It's hard to mess up these maters! Have fun experimenting and swapping out some seasonings to have it better match your main course.
- Spicy - Adding crushed red pepper to each potato layer will add a fun spicy bite!
- Toppings - Dip your potatoes in sour cream or ranch for a creamy finish.

Storage
In an air tight container, potatoes can be stored in the fridge for 4 days. For best reheating, use the oven or air fryer to crisp them back up.
