This grilled cabbage recipe is an easy, budget-friendly side dish with charred edges and a savory Parmesan coating. A perfect side-dish for summer grilling and BBQ meals.
Prepare cabbage by pulling away the outermost layers of cabbage and discarding them. Cut your cabbage into 2-inch wedges.
Make the Parmesan mixture by whisking together the olive oil, minced garlic, salt, pepper, chili flakes, and grated Parmesan in a small bowl.
Brush Parmesan mixture over all sides or each cabbage wedge.
Place the cabbage on a 375°F grill over medium-high heat. Grill each side for about 9 minutes until tender with charred edges. Remove from the grill.
To finish, dress each grilled cabbage wedge with a drizzle of balsamic glaze and any additional parmesan cheese you may have. Serve and Enjoy!
Notes
Resist the urge to move the cabbage around. Let it sear in one spot until it is time to flip.
When cutting the cabbage, cut it in half first to give you a steady base before slicing wedges.
Don't cut the wedges too thin, or they can fall apart on the grill.
Make sure each cabbage wedge has a part of the stem attached to help hold it together while grilling.
