Dice the onion and chop the bacon. ¾ cup Onion4 slices Bacon
In a small skillet, sauté the onion with 2 slices of the chopped bacon until softened. Note: You can substitute with oil if you prefer not to use bacon grease.
Add the green beans, remaining uncooked bacon, water, and sautéed onions to the crockpot or slow cooker. 5 bags Cut Green Beans2 Tbsp water
Cover and set on low for 7 hours. Stir, then season to taste with salt and pepper. Continue cooking for another 2 hours. You can extend the cook time for up to 10 hours for extra-tender green beans. 1 tsp Salt ½ tsp Black Pepper
Notes
If you want to add some heat, add in some chili flakes, cayenne pepper, or chipotle peppers.
If your green beans seem a little dry while cooking, just add a splash of chicken broth to keep everything saucy.
Taste before serving - Sometimes a little extra salt and pepper right at the end bring everything together perfectly.
Don't add too much liquid at the start. The green beans will release some moisture as they cook. You only need enough to get things going.
Storing Leftovers
Refrigerate - Store cooled leftover Southern-style green beans in an airtight container in the refrigerator for up to 3 days.
Freezer - These green beans can be frozen in a freezer-safe container for up to two months. Thaw overnight in the refrigerator for best results before reheating.
Reheat - Reheat green beans in the microwave, stirring every 30 seconds until heated through. You can also reheat them on the stovetop over low heat with a splash of water if needed.
