A classic Caesar Salad with a modern twist. The homemade dressing adds a fresh, vibrant flavor that you simply can’t get from a bottle, while the smoked trout elevates the dish to something truly special.
Heat smoker to 250°. Smoke the fish for 1 hour with no seasoning.
In a large bowl, sprinkle a generous pinch of salt. Add garlic and mash to make a paste using a fork.
Add in small portion of Smoked Trout and mash to incorporate with a fork. (the rest can be used as a topper for salad or save for later)
Stir in mustard and add egg yolks, continuing to stir until well combined.
Slowly drizzle in olive oil, stirring until emulsified.
Add Worcestershire and lemon juice and stir to combine.
Last step is to add in pepper and parmigiano Reggiano cheese.
Build your salad with your Romaine Lettuce and mix the lettuce and dressing first to incorporate very well and top with fresh grated cheese and some tasty crutons if you like them.
